Thanksgiving is all about traditions. From the meal we cook to the routines we have on that last Thursday of every month, nothing is more traditional than this particular holiday. I never realized how much I loved our traditions until I was overseas away from my family back in 1999 and 2000. I think we often take them for granted. Just like I took for granted that my grandparents would always be around. See, they were at the heart of most of my family’s Thanksgiving traditions. Whether we were heading over the proverbial river and through the woods to reach their house by 2pm or hosting it in our own home, my grandparents played a major part in the holiday. They’ve been gone for several years now, but we still celebrate their memory every day!

In honor of Thanksgiving, I want to share with you a recipe for a dessert that my grandmother started making long ago. It’s an expensive Thanksgiving dessert recipe that is so easy to make, even I managed to get it right! When I was overseas, my grandfather emailed me the recipe so I could have a little bit of home for the holidays. I still have that email in my account after all these years.

Ingredients:

  • 2 large bags of miniature marshmallows
  • 2 large cans of crushed pineapple
  • 2 quart of half and half

Directions:

  • Divide the marshmallows and pineapples into four
  • In a large container, make a layer of marshmallows.
  • Layer the pineapple on top.
  • Repeat until you’ve used all the marshmallows and pineapple
  • Pour half and half over the mixture along with any leftover pineapple juice from the cans. Stir.
  • Check frequently and stir every hour or two. It is ready when the marshmallows have soaked up the half and half.

That’s it! Enjoy your delicious Thanksgiving dessert recipe!

I’m writing this days in advance, by the way, because even I take off for the holidays! Thankfully, I have my trusty Intel AIO HP Envy Rove to help me with my scheduling. It’s so much faster than my old computer, so I’m not wasting time waiting on files to open! Between the speed, the great photo apps that I use and the touchscreen, I easily chop a good two hours off my writing and scheduling each week!

My son is a marshmallow nut! It’s funny, because as a kid, I wouldn’t eat this because of the pineapples. It took a while for my tastes to refine, lol.
