It’s the holidays and that makes it all about making treats.To eat and to share. Fudge is one of my go to treats. There are so many different versions of fudge out there. A flavor for every tastebud.

You can do Dark Chocolate, Milk Chocolate, White Chocolate, Peanut Butter, Vanilla, Maple Walnut, the possibilities are endless.

Pistachios are my favorite nut, ever since I was a little girl. My Grandpa used to get them at Christmas time, they used to be dyed red back them and by the time we were done eating them we’d all have red fingers. And it wouldn’t wash off. Thank goodness they stopped dying them.

I also love Pistachio Pudding. It was only a matter of time before this fudge happened.

I’ve been asked so many times how I get such clean cuts on my fudge and bars. It’s this9 1/2″ French Chef Knife. I am in love with this knife. Have you ever gone to cut bars made in an 8×8 or 9×13 pan and the knife is too short? Not this beauty. It’s longer so one one clean cut, perfection. Bars get messy when the knife has to go up and down. You should see the number this knife does chopping veggies too. (yes, we occasionally eat other things besides sweets at my house!)

Pistachio Fudge

Pistachio Fudge - Chocolate Chocolate and More! (4)

Ingredients

  • 3/4 cup white chocolate chips
  • 6 Tablespoons butter
  • 1/3 cup water
  • 1 package (4 serving size) instant Pistachio Pudding Mix
  • 3 cups powdered sugar
  • 1/2 cup shelled Pistachios

Instructions

  1. Line an 8x8 square baking pan with foil. Set aside.
  2. In a microwave safe large bowl, melt chocolate chips, butter and water, in microwave, on high for 1 minute. Remove from microwave and stir until chocolate chips are fully melted. If needed heat for an additional 30 seconds.
  3. Stir dry pudding mix to chocolate mixture. Once completely combined, stir in sugar, one cup at a time. Fold in shelled pistachios.
  4. Press fudge into prepared pan. Refrigerate for 2 hours to set.
  5. Remove fudge from pan and remove foil. Use a sharp knife to cut cleanly into squares. Store in an airtight container.

    Oh, my goodness!! I had COMPLETELY forgotten that pistachios were RED when we were little!!! What a great memory, Joan!!
    This fudge looks and sounds absolutely fantastic!! I never would have thought to put them in fudge.
    I have to tell you that I’m sold on Cutco for life. My mother was given a set for her wedding and it outlasted her marriage and I inherited it. I LOVE those knives and utensils and use them every day. I have one spoon that is broken and has moved cross country with me twice. I think I just need to stop procrastinating and send it to them to be fixed.

      I don’t have a scratch recipe for Pistachio Pudding. To make this fudge you want to use a boxed mix for instant pudding.

      How did yours turn out? Mine didn’t set? I messaged her and she said sweetened condensed milk, but that’s not a listed ingredient?

      Mine did not set well either. If I leave it in fridge you can pick it up, but it gets too soft sitting out. Grainy texture.

    This looks so good! I plan on making this to give away. I had a question though; would it be possible to use silicone molds instead of a cake pan. If so, would I need to do anything differently?

      Silicone molds are a great idea! No need to do anything extra. Once the fudge is set, just pop them out.

      No, this recipe does not use sweetened condensed milk, just white chocolate chips, butter, dry pudding mix, water and powdered sugar.

      It is made in an 8×8 pan. The size of the pieces is up to you. I cut them a little on the small side so I estimate that I get about 64 squares of fudge.

    This is my third year making this fudge, and I have to say how much I and everyone (I make and distribute many, many varieties and pounds of holiday treats every year) absolutely love it! And it takes what, 10 mins to make? It’s delicious, easy, and I won’t go back to any other way of making fudge, unless it’s a pudding flavor that doesn’t exist! That’s right, using this base recipe, I’ve made the Pistachio here of course, along with White Chocolate or Cheesecake (flavor is nearly identical) Cranberry-Nut (Pistachio or Walnut) Fudge, Pumpkin Spice-Nut Fudge (Pecan or Walnut), and even Hot Cocoa Fudge using chocolate pudding and mini cereal marshmallows mixed in and on top for nut-free friends. The recipe is interchangeable with any pudding flavor and with chocolate, I change the chips to semisweet. Simply amazing! Thanks for the recipe!
